Turkey Feta Meatballs

Ingredients
Lemon Sauce
- Juice of one lemon
- 1/4cup olive oil
- 1tbsp mustard
- 3 garic cloves minced
For Meatballs
- 1lb ground turkey
- 1 egg
- 3 cloves garlic (really more if were being honest)
- 1/2cup breadcrumbs
- Zest of one lemon
- Salt
- Pepper
- Onion powder
- 2tbs olive oil
For veggies
- Zucchini sliced
- Asparagus in 1-2in slices
- 14oz can of butter beans
Directions
- Preheat the oven to 400 F and prepare a baking sheet.
- Combine lemon sauce and set aside.
- Add drained butter beans, zucchini, and asparagus to the sheet pan.
- Make the meatballs by mixing all the meatball ingredients together in a bowl. Then scoop out about 2tbsp at a time and form into balls. Add to sheet pan.
- Drizzle sheet pan with half the lemon sauce.
- Bake for 22-26min.
- Drizzle the rest of lemon sauce and enjoy.
